Anatomy of Fresh Chutoro
Chutoro quality is similar to most Sashimi and can be judged based on its color, elasticity, and oil distribution. Defining Chutoro’s color is difficult because the portion is taken from the middle, which exaggerates the leanness of Akami and the fattiness of Otoro.
The color can vary, but generally, Chutoro has a pinkish color due to the higher oil content. The better the quality, the pinker it should be.
It’s important to avoid any color that is gray or dull; this color indicates the meat has been refrigerated and stored for a lengthy amount of time, allowing the fish to deteriorate.
The saying goes “Good quality Chutoro shines on its own.” High quality cuts will have a glossy and vibrant finish due to its rich moisture content. Pressing into the fish should have an elastic feel to it.
The marbling from oil distribution is subtle but not obvious, requiring close inspection to find the greasy texture.

We never invest in low quality Chutoro, nor is it ever frozen. We have a high Bluefin Tuna, or Hon Maguro, turnover rate, meaning every portion is always fresh.
We only offer our customers the highest grades of Bluefin Tuna because we only bring in larger fish. The larger the fish, the higher the overall oil content, and therefore a higher quality result.
Other retailers would advertise our Chutoro as Otoro because the quality is so high, which has caused many customers to believe we gave them a free upgrade to Otoro, but in reality, our Otoro is of even higher quality.
Problems with Frozen Block Chutoro
Customers can find frozen block Chutoro to be very cheap, but we encourage our customers from buying such a thing.
We believe those who want to enjoy Hon Maguro also possess certain requirements for the quality of their fish.
Toro is and should be an experience.
We only offer fresh portions, and the difference between fresh and frozen are worlds apart.
Not only is the taste drastically different, the texture is as well. When frozen, the original moisture and essence of Chutoro will be completely lost during the long process.
Once the portion is thawed, the color will also turn from its original color to gray and dull.
Frozen block Chutoro will shrink once thawed, and some portions are even sold with the fish skin still intact. In order for this kind of fish to be used in Sashimi, you will have to modify the overall shape at home, which is not only difficult but a lot of meat will be wasted in the process.
We advise our clients to buy based on the weight of pieces already cut; it is the fairest way.
Some merchants claim to not offer slicing services and only frozen block Chutoro in order to maintain freshness, but that is likely not true, and even if it is, you should not invest in it.

Every 200G of Chutoro Sashimi will contain 10-11 pieces of Standard Sashimi Cut. Please note that the number of cuts may vary depending on the actual situation. But the net weight is guaranteed to exceed.
